Vegan Taco Sauce


So here's the deal... I'm trying to go vegan. It's a work in progress to be sure. But that's not the point, well not really. Cause what I want to talk about today is TACOS!! And how much I love them... in all shapes, sizes and flavors. Recently, I've been digging on some beet tacos I made, they are sooo good, like for real. Really really good.

But since we're trying this whole vegan thing, I had to ditch my go to taco sauce and come up with something new. And it's pretty frickin good. I'm excited to put a whole bunch on some sweet potatoes tomorrow.

Anyways, mix this up, put it on some tacos, or sweet potatoes or a fiesta style bowl and see what you think.


Vegan Taco Sauce

- 1 cup vegan mayo

- 1/2 jar of trader joes salsa verde

- 2 limes juiced

- 2 tsp cumin

- 1 tsp dried dill

- 1 tsp paprika

- 1/2 tsp garlic powder

- 1/2 tsp salt

- 2 tsp nutritional yeast


... oh but the beet tacos you say, whats up with that? Well, they're delish and you should make some of those too. Warm up some corn tortillas, throw on a bit of refried black beans, chopped greens, chopped basil, some vegan taco sauce (duh) and beets.

For the beets, I dice beets, onions and some mushrooms. Heat up some avocado oil. Sauté the beets until they're getting soft, throw in the onions - keep cooking on med or medium high until they get translucent, now throw in the shroomies and keep cooking. When the onions start to carmelize, deglaze the pan with a spalsh of red wine and turn down to low temp. Add cumin, paprika, garlic powder to taste. Maybe some salt and pepper too.
